Pizza ovens add warmth, flavor, and atmosphere to any backyard or outdoor kitchen. But to get the best results—and protect your equipment—it’s important to know how to properly use and maintain your pizza oven door. At Old West Iron, we hand-forge our doors to last generations, but even the most durable pieces require thoughtful use. Here's what you need to know before your next pizza night.
1. Never Overfire Your Oven
The #1 issue we see with pizza oven door damage comes from sustained overfiring. While our doors are built tough, no painted steel finish can survive temperatures above 900°F–1000°F for extended periods. At these extremes, finishes will blister or flake, and mechanical parts like thermometers may fail.
Visual evidence from customers has shown cracked finishes and melted thermometer lenses—clear signs of extreme overheating.
2. Understand the Limits of Paint
Painted finishes on steel are great for aesthetic protection under normal cooking temperatures (400–600°F). However, once you surpass that range regularly, paint will begin to deteriorate. This isn't a product flaw—it's a natural result of heat chemistry.
If you're planning high-temp firings, consider upgrading to a natural finish like heat-treated beeswax instead.
3. Consider the Beeswax Option for High-Heat Users
For serious fire-lovers running their ovens hot, we offer a traditional beeswax finish. It's heat-resistant, easy to maintain, and ages beautifully—but it does require care:

600°F–800°F: Recoat every 3–5 uses

Normal cooking: Recoat as needed for aesthetics

4. Think Twice About Thermometers in High Heat
Thermometers are useful—but they have their limits. If you often exceed 800°F, we recommend a thermometer delete. We'll provide a matching steel plug to close the opening cleanly. This prevents future failures and keeps your door looking great.
